Ingredients:
- 1 cup rice (preferably Sona Masoori or any short-grain rice)
- 1/2 cup fresh grated coconut (optional)
- Salt to taste
- Water as needed
Instructions:
- Wash the rice thoroughly and soak it in enough water for at least 4-5 hours or overnight.
- If using fresh grated coconut, soak it along with the rice.
- After soaking, drain the water from the rice (and coconut, if using) and transfer them to a blender.
- Add salt to taste and blend the rice to a smooth batter, adding water as needed. The consistency of the batter should be thin, similar to that of buttermilk.
- Once the batter is smooth, transfer it to a large mixing bowl.
- Heat a non-stick or cast-iron skillet (preferably a crepe pan) over medium heat.
