Suranache Kaap is a popular Maharashtrian dish made from sliced elephant foot yam (Suran or Jimikand) that is deep-fried until crispy. It’s a simple yet flavorful dish commonly served as a side dish or snack. Here’s a basic recipe to make Suranache Kaap:
Ingredients:
- 500 grams elephant foot yam (Suran), peeled and thinly sliced
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- Oil for deep frying
- Fresh coriander leaves for garnishing (optional)
Instructions:
- Prepare the Suran: Peel the elephant foot yam and slice it thinly. You can soak the slices in water for about 10-15 minutes to remove any excess starch.
- Marinate: In a mixing bowl, add the sliced Suran and sprinkle turmeric powder, red chili powder, and salt. Toss well to coat the Suran slices evenly with the spices. Let it marinate for about 15-20 minutes.
- Fry the Suran: Heat oil in a deep frying pan or kadhai over medium heat. Once the oil is hot, carefully add the marinated Suran slices in batches, making sure not to overcrowd the pan. Fry until the Suran slices turn golden brown and crispy. Remove them from the oil using a slotted spoon and drain excess oil on paper towels.
- Serve: Transfer the fried Suran slices to a serving plate. Garnish with fresh coriander leaves if desired. Serve hot with your favorite chutney or sauce.
Enjoy your crispy and flavorful Suranache Kaap as a snack or side dish with your meal!
