Instructions:

1. Prepare the Vegetables:

  1. Wash and chop all the mixed vegetables into small, uniform pieces.
  2. If using cauliflower or any other hard vegetable, blanch them in hot water for a few minutes until slightly tender. Drain and set aside.

2. Dry Roast the Spices:

  1. Heat a pan over low heat and dry roast mustard seeds, fennel seeds, cumin seeds, and fenugreek seeds until they become aromatic. Allow them to cool down.
