Sev Tamatar ki subzi

Sev Tamatar is a classic Indian dish featuring a tangy tomato-based gravy topped with crunchy sev, a crispy fried gram flour vermicelli. This flavorful dish offers a perfect balance of spicy, tangy, and crunchy elements, making it a popular accompaniment to Indian bread like chapati or puri.

Here’s a detailed recipe for you:

Ingredients:

  • 4 medium-sized tomatoes, finely chopped
  • 1 cup sev (fried gram flour vermicelli)
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • A pinch of asafoetida (hing)
  • 1 green chili, finely chopped (optional)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1.2 teaspoon Kashmiri red chili powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Chopped coriander leaves for garnish

Instructions:

  1. Prepare the Tomatoes:
    • Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
    • Add asafoetida (hing) and chopped green chili. Sauté for a few seconds.
  2. Cook the Base:
    • Add ginger-garlic paste and sauté until the raw smell disappears.
    • Add the finely chopped tomatoes and cook until they turn soft and mushy, stirring occasionally. This might take about 7-8 minutes.
  3. Seasoning and Spices:
    • Once the tomatoes are cooked and softened, add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  4. Simmer:
    • Cook the mixture for another 5-7 minutes on low heat, stirring occasionally. This will help the spices blend well with the tomatoes.
  5. Finish and Serve:
    • Once the tomatoes reach a thick gravy consistency, add sev and turn off the heat after 2 minutes.
    • To serve, place the prepared tomato gravy in a serving dish and sprinkle a generous amount of sev on top.
    • Garnish with chopped coriander leaves for added freshness and flavor.

Sev Tamatar is best enjoyed with chapati, puri, or as a side dish with rice. It offers a delightful blend of tangy tomatoes and the crispy texture of sev, making it a favorite among Indian food enthusiasts!
