Amritsari Nutri, is a popular vegetarian dish from Amritsar, India, made with textured vegetable protein (TVP) or soya chunks. Here’s a recipe for Amritsari Nutri:
Ingredients:
- 1 cup Nutri/Soya Chunks
- 2 tablespoons oil
- 1 onion, finely chopped
- 1 Big Capsicum (bell pepper) chopped
- 2 tomatoes, pureed
- 1/2 cup spinach boiled and pureed
- 1 tablespoon ginger-garlic paste
- 1 green chili, finely chopped (adjust to taste)
- 1 teaspoon cumin seeds
- 1 bay leaf
- 1-inch cinnamon stick
- 2-3 cloves
- 2-3 green cardamom pods
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- 1 tablespoon fresh cream (optional)
- 1 tablespoon butter (optional)
Instructions:
- Preparing Nutri/Soya Chunks:
- Boil enough water in a pan and add the Nutri/Soya Chunks. Let them boil for about 3-4 minutes.
- Turn off the heat, cover the pan, and let them soak in hot water for 10-15 minutes.
- After soaking, drain the water and squeeze out excess water from the Nutri/Soya Chunks. Set aside.
- Cooking the Nutri:
- Heat oil in a pan or kadai over medium heat. Add cumin seeds, bay leaf, cinnamon stick, cloves, and green cardamom pods. Sauté until fragrant.
- Add chopped onions and bell peppers, and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and chopped green chili. Sauté for a couple of minutes until the raw smell disappears.
- Adding Spice Mix:
- Add tomato puree and cook until the oil starts separating from the masala.
- Add spinach paste
- Add coriander powder, cumin powder, red chili powder, turmeric powder, garam masala, and salt. Mix well and cook for a few minutes until the masala is cooked through.
- Adding Nutri/Soya Chunks:
- Add the squeezed Nutri/Soya Chunks to the masala. Stir gently to coat the chunks with the masala. Cook with water until the water is evaporated and oil starts to separate, , stirring occasionally. Repeat the cooking process one more time by adding water to it.
- Finishing Touches:
- If using fresh cream and butter, you can add them at this stage for a richer flavor. Mix well.
- Garnish and Serve:
- Garnish with fresh coriander leaves.
- Serve hot with kulcha, roti, naan, or rice.

- Soaking the Nutri/Soya Chunks helps them absorb flavors better and makes them softer.
- Adjust the spice levels according to your taste preferences.
