Kathal ki Sabzi (Jackfruit curry)

Kathal ki sabzi is a North Indian dish featuring tender, fried jackfruit sautéed with aromatic spices like cumin, mustard seeds, turmeric, and a blend of ground spices. This vegetarian delight offers a rich, flavorful curry that pairs perfectly with roti or rice. The raw jackfruit absorbs the spices beautifully, creating a hearty and satisfying dish popular in Indian cuisine.

Here’s a simple recipe for making kathal ki sabzi:

Ingredients:

  • Raw jackfruit (kathal), peeled and cut into bite-sized pieces
  • Onions, finely chopped
  • Tomatoes, chopped
  • Ginger-garlic paste
  • Green chilies, chopped
  • Cumin seeds
  • Mustard seeds
  • Turmeric powder
  • Red chili powder
  • Coriander powder
  • Garam masala
  • Salt to taste
  • Oil for cooking
  • Oil for frying
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the jackfruit:
    • Peel the raw jackfruit and cut it into bite-sized pieces. Remove the seeds and the core.
    • Heat Oil on medium heat, once oil is hot enough gently slide the jackfruit pieces and fry until they are tender. Once done drain the oil and set aside.
  2. Sautéing the spices:
    • Heat oil in a pan. Add cumin seeds and mustard seeds. Allow them to splutter.
    • Add chopped onions and sauté until they turn golden brown.
  3. Adding ginger-garlic paste and tomatoes:
    • Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
    • Add chopped tomatoes and cook until they become soft and the oil starts separating from the masala.
  4. Seasoning and spice powders:
    • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
  5. Cooking the jackfruit:
    • Add the fried jackfruit pieces to the masala and mix thoroughly to coat the pieces with the spices.
  6. Simmering:
    • Cover the pan and let the jackfruit cook on low heat for 15-20 minutes, stirring occasionally.
  7. Garnishing:
    • Once the jackfruit is tender and the spices are well-incorporated, add garam masala and chopped green chilies. Mix well.
  8. Finishing touches:
    • Garnish with fresh coriander leaves and serve hot with roti or rice.
