Ingredients:
- 1 cup soya chunks (Nutri)
- 2 medium-sized potatoes, peeled and diced
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped or pureed
- 1 green chili, finely chopped (adjust to taste)
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- Water as required
Instructions:
- Preparing Soya Chunks:
- Boil enough water in a pan and add the soya chunks. Let them boil for about 3-4 minutes.
- Turn off the heat, cover the pan, and let them soak in hot water for 10-15 minutes.
- After soaking, drain the water and squeeze out excess water from the soya chunks. Set aside.
- Making the Sabzi:
- Heat oil in a pan or kadai over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Stir in the ginger-garlic paste and green chili. Sauté for a couple of minutes until the raw smell disappears.
- Adding Spices and Tomatoes:
- Add chopped tomatoes or tomato puree to the pan. Cook until the tomatoes soften and the mixture becomes pulpy.
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook for a few minutes until the masala is cooked through. Add some water.
- Combining Soya Chunks and Potatoes:
- Add the squeezed soya chunks and potatoes to the masala. Mix everything well.
- Add water as per required thickness of gravy, cover and let it cook on low-medium heat for about 10-12 minutes. Ensure the potatoes and soya chunks absorb the flavors and potatoes cook well.
- Garnish and Serve:
- Garnish with fresh coriander leaves.
- Serve hot with roti, naan, or rice.
