Gatta Kadhi

Gatta Kadhi or Gatte ki sabzi is a traditional Rajasthani dish made with gram flour (besan) dumplings cooked in a flavorful yogurt-based curry. Here’s a detailed recipe for making this delicious dish:

Ingredients:

For Gatte (Gram Flour Dumplings):

  • 1 cup besan (gram flour)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Salt to taste
  • 2 tablespoons oil
  • Water (as needed)

For Curry:

  • 2 cups thick yogurt
  • 1 tablespoon oil or ghee
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • A pinch of asafoetida (hing)
  • 1 bay leaf
  • 2-3 dried red chilies
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Gatte (Gram Flour Dumplings):
    • In a mixing bowl, combine besan, turmeric powder, red chili powder, coriander powder, cumin seeds, asafoetida, salt, and oil.
    • Gradually add water and knead the mixture into a firm dough. Divide it into small portions and roll each portion into cylindrical-shaped dumplings (gatte).
  2. Boil the Gatte:
    • Bring a pot of water to a boil. Carefully drop the gatte into the boiling water and cook for about 10-12 minutes until they float to the surface.
    • Remove the cooked gatte from the water and let them cool. Cut the gatte into bite-sized pieces and set aside.
  3. Prepare the Curry:
    • Whisk the yogurt in a bowl until smooth and set aside.
    • Heat oil or ghee in a deep pan or kadhai. Add cumin seeds, mustard seeds, asafoetida, bay leaf, and dried red chilies. Let them splutter.
  4. Add Spices:
    • Reduce the heat and add red chili powder, turmeric powder, coriander powder, and garam masala. Mix well and sauté for a minute.
  5. Add Yogurt:
    • Slowly add the whisked yogurt to the pan while stirring continuously to prevent curdling. Mix until it combines well with the spices.
  6. Cook the Gatte:
    • Gently add the cut gatte into the yogurt mixture. Stir gently to coat the gatte with the curry. Cover and simmer for about 15-20 minutes on low heat, stirring occasionally.
  7. Check Consistency and Season:
    • Adjust the consistency of the curry by adding water if needed. Add salt according to your taste and simmer for a few more minutes.
  8. Garnish and Serve:
    • Once the gatte are tender and the curry has thickened, garnish with fresh coriander leaves. Serve hot with roti or steamed rice.
