For Chicken Tikka:

  1. 500 grams boneless chicken, cut into small cubes
  2. 1 cup plain yogurt
  3. 2 tablespoons ginger-garlic paste
  4. 1 tablespoon lemon juice
  5. 1 tablespoon Kashmiri red chili powder
  6. 1 tablespoon ground coriander
  7. 1 tablespoon ground cumin
  8. 1 teaspoon turmeric powder
  9. 1 teaspoon garam masala
  10. 2 tablespoons vegetable oil
  11. Salt to taste
  12. Skewers for grilling

For Rolls:

  1. Rumali Rotis or parathas (store-bought or homemade)
  2. Sliced onions
  3. Sliced tomatoes
  4. Sliced cucumbers
  5. Lettuce leaves
  6. Mint chutney or tamarind chutney
  7. Chopped coriander leaves for garnishing
  8. Lemon wedges (optional)

Instructions:

  1. Prepare the Chicken:
    • In a mixing bowl, combine yogurt, ginger-garlic paste, lemon juice, Kashmiri red chili powder, ground coriander, ground cumin, turmeric powder, garam masala, vegetable oil, and salt to create the marinade.
    • Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 2-4 hours, or preferably overnight for the flavors to infuse.
  2. Skewer and Grill the Chicken:
    • Preheat your grill or oven to medium-high heat. Thread the marinated chicken pieces onto skewers.
    • Grill the chicken skewers for about 12-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges. If using an oven, bake at 400°F (200°C) for approximately 20-25 minutes or until done.
  3. Assemble the Rolls:
    • Warm the rumali rotis or parathas on a pan or griddle.
    • Place a roti or paratha on a clean surface. Arrange lettuce leaves in the center.
    • Add a layer of sliced onions, tomatoes, and cucumbers on top of the lettuce leaves.
    • Remove the grilled chicken from the skewers and place a generous amount on the vegetable layer.
    • Drizzle mint chutney or tamarind chutney over the chicken.
    • Sprinkle chopped coriander leaves for added freshness.
  4. Roll and Serve:
    • Roll the Rumali roti or paratha tightly, enclosing the fillings.
    • Wrap the bottom half in foil or parchment paper to secure the roll.
    • Optionally, serve with lemon wedges on the side for extra tanginess.

These Chicken Tikka Rolls make for a delicious meal or a delightful snack, combining the succulent flavors of spiced chicken with fresh veggies and chutneys.
