Indori Garadu Chaat

Garadu Chaat is a popular street food from the vibrant city of Indore in India, made primarily with yam (also known as garadu). Here’s a detailed recipe for Garadu Chaat:

Ingredients:

  • 500 grams yam (garadu), peeled and cubed
  • Oil for frying
  • 1 teaspoon chaat masala
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1/2 teaspoon cumin powder
  • Tamarind chutney
  • Green chutney
  • Chopped coriander leaves for garnish
  • Sev (crispy chickpea flour noodles) for topping
  • Chopped onions (optional)
  • Chopped tomatoes (optional)

Instructions:

  1. Preparing the Yam:
    • Peel the yam and cut it into small cubes. Soak the cubes in water for about 10-15 minutes to remove excess starch.
    • Drain the water and pat dry the yam cubes using a clean kitchen towel or paper towels.
  2. Frying the Yam:
    • Heat oil in a frying pan or kadai over medium-high heat.
    • Once the oil is hot, carefully add the yam cubes and fry them until they turn golden brown and crispy. Remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
  3. Seasoning the Fried Yam:
    • In a mixing bowl, add the fried yam cubes.
    • Sprinkle chaat masala, red chili powder, turmeric powder, salt, and cumin powder over the fried yam. Toss gently to coat the spices evenly.
  4. Assembling the Chaat:
    • Place the seasoned fried yam cubes on a serving plate.
    • Drizzle tamarind chutney and green chutney generously over the yam cubes.
    • Sprinkle chopped onions and tomatoes (if using) over the yam cubes for added freshness.
    • Garnish with chopped coriander leaves and a generous topping of sev.
  5. Serve:
    • Garadu Chaat is ready to be served immediately as a flavorful and crispy street snack.
