Sirke Wale Pyaaz (pickled onion)

  • 1 teaspoon whole black peppercorns

  • Sterilized glass jar with a tight-fitting lid

Instructions:

  1. Peel and slice the onions thinly. You can leave them in rings or cut them as desired.
  2. In a saucepan, add the vinegar, sugar, salt, whole black peppercorns, dried red chili peppers. Bring this mixture to a gentle boil over medium heat, stirring occasionally until the sugar and salt dissolve completely.
  3. Once the mixture reaches a boil, turn off the heat and let it cool for a few minutes.
  4. Place the sliced onions and beetroot in a clean, sterilized glass jar.
  5. Pour the warm vinegar mixture over the onions in the jar, ensuring they are completely submerged in the liquid.
  6. Let the jar cool to room temperature. Once cooled, seal it tightly with a lid and store it in the refrigerator.
  7. The Sirke Wale Pyaaz will be ready to consume after 24 hours, but the flavors develop more if left to marinate for a few days in the refrigerator.
  8. These onions can be stored in the refrigerator for a couple of weeks.
