Ingredients:

For the Outer Tikki:

  • 4 large potatoes, boiled, peeled, and mashed
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon dry mango powder (amchur)
  • 1 teaspoon cumin powder
  • Salt to taste
  • 2 tablespoons cornflour or bread crumbs (for binding)
  • Oil/Ghee for shallow frying

For the Stuffing:

  • 1 cup boiled and mashed green peas
  • 100g paneer cut in tiny cubes.
  • 2 green chilies finely chopped.
  • 1 teaspoon grated ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 tablespoon oil
  • Salt to taste
  • Chopped fresh coriander leaves for garnish

Instructions:

For the Outer Tikki:

  1. Prepare the Mashed Potatoes:
    • Boil, peel, and mash the potatoes thoroughly in a mixing bowl. Ensure there are no lumps.
  2. Seasoning the Potato Mixture:
    • Add red chili powder, garam masala, dry mango powder, cumin powder, and salt to the mashed potatoes. Mix everything well.
  3. Binding the Mixture:
    • Add cornflour or bread crumbs to the potato mixture. This will help bind the tikki mixture together. Mix until it forms a dough-like consistency.
  4. For the Stuffing:
    • Heat oil in a pan. Add cumin seeds and let them splutter.
    • Add boiled and mashed green peas, paneer cubes, coriander powder, garam masala, and salt. Cook the mixture for a few minutes until the flavors combine well.
    • Let the stuffing mixture cool down.
  5. Assembling the Tikki:
